The Raw Chocolate and Energy Balls Workshop is a unique and innovative space that offers chocolates and desserts created with a health-focused and natural approach. Virgile has two favorite ingredients in his Workshop: superfoods, including raw cacao, and dates, for which he is an expert. He renovates the craft of chocolate-making with a raw version sweetened with special, raw, untreated dates, and works with ancient varieties of ‘criollo’ beans.

Beyond raw chocolate, his workshop serves as an alchemical place to transform traditional desserts into Healthy desserts, as well as for the production of these famous energy balls!

Artisanal Expertise

Virgile Escalant, passionate about nutrition and wellness, founded his Raw Chocolate Workshop after discovering the benefits and potential of raw cacao from the best in the field.

He began producing raw cacao bars and homemade desserts in his kitchen, which would become his Workshop.

Virgile follows the principles of raw pastry-making:

No cooking: foods are not heated above 42°C to preserve enzymes, vitamins, and minerals.

Natural ingredients: bases often include dried fruits, nuts, seeds, vegetable oils (such as coconut oil), and natural sweeteners like dates, maple syrup, or raw honey.

Dairy-free and gluten-free

The chocolate is prepared using this same artisanal method, respecting the principles of low temperature, thus preserving the nutrients of Criollo cacao beans, known for their smoothness and rich aroma.

Raw cacao - Criollo

The cacao used is organic, raw, and of superior quality, sourced ethically. The products contain no refined sugars or artificial additives.

Raw cacao has exceptional nutritional properties:

Antioxidant, protects cells and reduces inflammation.

Minerals: Magnesium, iron, potassium, and calcium essential for health.

Theobromine: A mild stimulant that improves energy and mood.

Phenylethylamine (PEA): Known as the “love molecule”, it promotes feelings of happiness.

These qualities make it a beneficial food for the heart, brain, and general well-being, reinforcing its “divine” aura.

Bars, energy balls, and other wonders

Virgile crafts each bar or creation with special care, like a work of art, to preserve the integrity of the ingredients and bring beauty to them! He prepares bars with rare and high-quality ingredients and superfoods: the blue bar (spirulina), the white bar (white chocolate), the pink bar (damask rose), the green bar (matcha)….

The Workshop is also the place where the famous “energy balls” are created, reinvented by Virgile with superfoods. He uses ingredients such as raw cacao, of course, but also maca, turmeric, coconut, vanilla, lucuma, spirulina, matcha…

Always with the aim of creating a healthy recipe, these small colorful balls are designed to provide a nutritious and tasty boost!

Virgile gives free rein to his inspiration and creates plenty of other delicious desserts like Bounty, filled chocolates, manguettes, ananasettes, figuettes, dattettes… let yourself be surprised by even more new creations, always raw and sugar-free!!
